How to counteract the acidity of tomatoes, or tomato sauce.

There are times when we see some lovely tomatoes in the greengrocer’s or they bring them with a lot of affection from the town, but when we sink the teeth we are very disappointed because they are very acidic. Who has not ever happened?
We have a trick for both fresh tomatoes and tomato sauce. It’s very simple. Just add a splash of our mustard sauce with honey. What we will get is an amazing mouth-watering contrast. Then we can dress it with the ingredients we want. For example in salads, simply with a touch of oregano (or Provencal herbs as in the photo) and a little olive oil you have a gourmet salad.
